The color and flavor of honey is dependent on the type of flower nectar that the bees collect. Generally, lighter honey comes from flowers with lighter nectar and darker honey comes from flowers with darker nectar.
Honey has an indefinite shelf life if stored properly in a cool, dry place. It may crystallize over time, but this is normal and can be eaten as is or easily remedied by gently heating the honey.
